I feel like I could go join "The Geek Squad" now with all my new knowledge of computers!
Now I am trying to get caught up with my blogging! I am going to put everything into one big post with the stuff that's been happening most recently at the beginning ... so here goes!
Sweetheart Valentine's Dance . . .
Each year, our church puts on a Sweetheart's Ball. They always have fantastic decorations, a live band with dancing, great food and a great time. It is such a fun evening to spend with your sweetheart! My sweetheart barely made it home from the middle-east in time to take me. He arrived that morning, was totally wiped out by the time we were supposed to go, but was a great sport! It was a very romantic night!
Delicious Lemon Curd Tarts
& Metro Mint Water . . .
Have you ever tasted Lemon Curd? Only about a thousand times better than lemon pudding. Found this GREAT simple recipe that can be made in the microwave and served in phyllo dough/prebaked little cups that you get 15 of at Walmart for $1.54. Definitely beautiful, tasty little things! Squirt on a dab of whipped cream and top with a raspberry and in no time, you have a little elegant dessert!
I made them for our Culinary Club but the big hit was the Metro-Mint water that we did taste tests on! Jessica told me about this refreshing beverage and we had to try them all. They all have a chill factor on the side. Peppermint is has a chill factor of 9 (and kind of tastes like watered down Listerine). My personal favorite is Chocolate Mint that has a chill factor of 4. Just another clever way to get us to spend $1.49 on a bottle of water! We are giving a "cheer" to Jessica in the picture below. Funny - our "theme" was rice dishes but I didn't even get 1 picture of the fabulous things that everyone brought - including home-made sushi, white chocolate rice pudding with a cherry sauce on top, etc.!
My Freshman Son Playing Sophomore B-ball . . .
Jacob is a freshman this year, however he was able to play on the sophomore team. They had to many freshmen so they split it into 2 teams. The only problem is that his team only had about 4 sophomores and they had to play against sophomore teams with much more experience. Needless to say, it has been a learning experience and not so much a winning experience! However, the Jr. Varsity coach let him play with the JV team during their last game and he scored a 3 pointer and made a free-throw so there is a promise of things to come next year. He was VERY excited.
