Recipe Club - May 10th

We have a Recipe Club that meets every month and it is so much fun!!
Each month we pick a theme -- this month's was:

 Dynamic Duos
 (foods that go together)

I chose Berries/Fruit & Cream

I made a Fruit Pavlova that my girlfriend Tracey's Mom (Margot) made for us when we were in Australia.  It is a type of meringue that melts in your mouth (kind of like the texture of malt balls).  I had a bit of a problem with the meringue -- doesn't want to fluff up like it should here in the Mile High state of Colorado, due to the altitude.  I even tried the adjustments that were suggested, however, it tasted really good, looked pretty, and was so fun to make.

Here is the group that was there this time ....
we basically always have the same core group but others come and go.

A couple of months ago someone made this wonderful
 Mile-High Lemon Meringue Pie
I don't really like Lemon Meringue Pie but this is the best I have ever tasted!
I made the pie below to sell at a fundraiser and it sold for $30.00!
(Didn't do the crust -- that will have to be another recipe club night!)

OUR NEW TRUCK AND POP-UP TENT TRAILER
We have been avid tent campers but decided to upgrade!

We managed to remember how to set it up ... once we got it home!!

The inside is so SWEET!!! It will be so much fun!!

 Jacob approves of his bed!

We were going to take it for it's maiden Camping Trip this weekend
but it ended up raining too much!  Bummer!

We had to leave it at it's new home -- the RV Storage Place!

We did such a good job of learning how to hook it up and backing it
up into our spot at the place where we are storing it!

Kraig got me this DVD for Mother's Day ... we laughed so hard watching it!
What a classic!

Lots of good times ahead in the new trailer!!!
