Just A Hot Tub Miracle!!
It had been a couple of weeks since I had checked the hot tub. It was all good before we went up to Kamas for Christmas break but with getting home and back to school, I kept saying I was going to do it and just didn't get around to it for a while. During the winter, it seems to evaporate quicker and you have to keep it filled to a certain level or it can ruin the pump, heater, etc.
When I went out to check it, it said the lines were frozen AND the heater wouldn't turn on! I stood out in the FREEZING weather and with my hands in the freezing cold water and tried to get it turn on (of course Kraig was on his way to Dubai -- not much help there). After many calls to the hot tub peeps, lots of prayers (this was an EMERGENCY ... though I'm sure in the grand scheme of things it was pretty low on the list), I got a low-voltage light to go underneath it where the controls are and hoped it might melt things. Low and behold, when I came down in the morning, the heater had clicked on! Like I said .... a HOT TUB MIRACLE!!
PHO
(PRONOUNCED "FUH")
Vietnamese Soup -- Our New Favorite!
Jacob has a new girlfriend, Carissa, and somehow we got to talking about this new restaurant in town. She said that she and her parents went there a lot, so I thought we would give it a try.
Jacob, Carissa and I went on a date to try it!
There are all sorts of different types of broth with various meats.
You add these wonderful fresh condiments of basil, cilantro,
sprouts, lime, Jalapenos and hot sauce to make your
individual bowl to your liking.
DELICIOUS!
I had the chicken broth with slices of chicken in it.
Also ordered a couple of these tasty shrimp spring rolls.
Carissa ordered another favorite ... a noodle bowl.
Various meats with rice noodles.
The same condiments go with these very filling bowls.
Of course Jacob had to go for the platter of 3 different kinds of meats!!
A guy can only eat so many veggies!
Love that place .... a new favorite.
Can't wait to take Jessica and Nate there!
A CRAZY "COUNTRY" DANCE
Jacob and Carissa got dressed up "country style" to go to this dance.
Just had to include this funny picture of Jacob ... didn't get to see Carissa.
All he needs now is a pick-up truck complete with a gun rack!
AND MORE FOOD!!
When Dad got back, we had to go out and celebrate!
Jacob had been wanting to go to Landry's Seafood Restaurant where they have "all you can eat" King Crab Legs on Wednesdays. He was in CRAB HEAVEN! I forget how many plates of these puppies he ordered --- they kind of grossed me out!
(This is the only picture we got of that night!)
Needless to say, it's time to start back to the workouts
and get rid of this muffin top!!
(The fat belly hanging over the top of your pants)
Thought this was a GREAT picture!
Takes a lot of motivation to hit the gym when it looks like this
most days until April!

I can't believe the hot tub didn't give up the ghost - I really thought it would. Yay for Pho! Can't wait to try it! (because I am commenting on this as if you wrote it in January....so technically we haven't been twice already!! So good.)
Those crab legs totally gross me too! I love crab but can't eat it from the legs like that.
That muffin top is on my fridge. I love it.
